Baked Tortellini 'n' Cheese with Bacon

Want the ultimate mac 'n' cheese experience? How about switching out boring mac for cheese tortellini and adding some bacon? Yep, it just got crazy!


Cheesy Goodness



Ingredients:

1 lb. cheese tortellini, the refrigerated kind
2 10.75oz cans of cheddar cheese soup
1 lb. of bacon
3 cups grated Colby cheese, save about a cup for the tops
1/2 a can of milk
1/2 a can of pasta water
pepper to taste

I don't suggest adding any salt between the cheese and the salted pasta water, all that's needed is a healthy dose of pepper. I use four 12oz ramekins or you could use one casserole dish.

Now What:

Cut bacon into bit sized pieces and fry crispy. Cook tortellini in salted water till al denta. In a large bowl mix soup, liquid, grated cheese, tortellini and bacon. Mix carefully with rubber scraper to keep from breaking the tortellini.

Pour into baking dish(es) and top with remaining cheese. Bake for 20 at 350ºF then broil for 3-5 for a golden brown top.
